I am not a formally schooled "Chef", I was taught the joy of cooking in my Sicilian mothers kitchen. When I am in my kitchen preparing my family's recipes it reminds me of her and the loved ones that have passed on but come alive through memories made in the kitchen or around the kitchen table. For me and my family cooking and sharing food is about making memories. The time I spend cooking in the kitchen and at the table with the people I love are the most meaningful moments in my life.

Oven Roasted Salmon
We didn't eat Salmon growing up, I grew up on Long Island we ate local fish flounder, clams, blue fish, swordfish etc...I fell in love with Salmon from the first bite!This is my go to meal in a pinch, delicious light but so flavorful! You can serve this with sides of your choice or on top of a salad.
Oven Roasted Salmon
Ingredients
1 1/2 lb Salmon Fillet
2 Tbsp of olive oil
Garlic Powder
Onion Powder
Rosemary
Kosher or sea salt
Black Pepper
Directions
Preheat oven 400'. Place Salmon on a sheet pan skin side down. Evenly sprinkle all spices on Salmon drizzle with olive oil. Place in oven for approx 12 minutes, after turn oven on broil, broil Salmon for 5 minutes this will crisp up the top. This will be for a rare middle. Depending on thickness cooking times may vary.
