I am not a formally schooled "Chef", I was taught the joy of cooking in my Sicilian mothers kitchen. When I am in my kitchen preparing my family's recipes it reminds me of her and the loved ones that have passed on but come alive through memories made in the kitchen or around the kitchen table. For me and my family cooking and sharing food is about making memories. The time I spend cooking in the kitchen and at the table with the people I love are the most meaningful moments in my life.

Summertime Pasta
This pasta was a staple when we went out east on the Island to spend the day on the Long Island Sound. Garden tomatoes and fresh basil were in abundance in my dad's garden, or at the local farm stands. When I make this in the summer it brings back fond memories of family, fun and carefree times, and feasting on home grown produce.
Pasta with Tomatoes and Basil
Ingredients
1 lb.Pasta
2 cups diced Roma tomatoes
1/2 cup chopped Fresh Basil
4 cloves minced Garlic
1/2 cup Olive Oil
Sea Salt to taste
Crushed red pepper flakes to taste
Grated Romano Cheese (my Favorite)
Cook pasta according to directions. In the meantime chop all your ingredients. Drain pasta and add all your ingredients except the cheese. Toss. Serve with the grated cheese.

I made the summer pasta a few weeks ago and it was incredible! Of course it wasn't as good as Lucy's as I was fortunate to have been a guest the night she made the dish and took the pictures! Boy it was close though! Mike Frino, Cornelius, NC.
